Hi everyone, and welcome to my first post.

I created this blog as a way to document my weight loss journey via the Ketogenic Diet. I am a business owner and a full time employee in a supervisory role (very stressful), plus I am a mom and a wife.

Over the last several years I have been slowly gaining weight. I can’t even blame the weight gain on my children because they’re both 10+. Lol

In 2017, I came across the topic of the Keto Diet. Once I started reading about it, I started to look at videos and then I compiled a lot of information. I was seeing lot’s of great results. After researching for about 1 month or so, I decided that I was going to try the diet for myself.

Once I got started, I had so much energy. I was no longer feeling stuffed after eating, and I was noticeably smaller. I did good for about 4 months, until we had a family celebration… That is where I messed up.

Fast forward to 2018 — I wanted to try again. I succeeded again for about 4 months and then I slipped, and that was it.

Now here we are.. I am going to try this out again. Hopefully the third time is the charm. I am creating this blog for accountability. I would also like to find others who may be doing the keto diet as well.

Are there any of you that have successfully met your weight loss goals doing keto or low carb? If so, I would love some advice on how to keep going.

My Go-To Keto Snacks for Staying on Track

Here are some of my favorite keto snacks that have become a staple in my journey:

1. Crispy Cheese Chips

These are one of my absolute favorites! They’re crunchy, salty, and so easy to make at home or buy from the store. Just pop some shredded cheese in the oven, bake until crispy, and you’ve got the perfect snack. They give me the satisfaction of eating chips, without the carbs..

2. Hard-Boiled Eggs

Hard-boiled eggs are the perfect protein-packed snack, and they’re so versatile. I always keep a batch ready in the fridge. They’re great on their own with a sprinkle of salt and pepper, or you can slice them and add a dollop of mayo or mustard for extra flavor. Plus, they’re portable, making them perfect for busy days!

3. Almonds

Almonds are another one of my go-to snacks. They’re high in healthy fats and low in carbs, so they fit perfectly into the keto lifestyle. I love keeping a small bag of almonds in my bag for those moments when I need a quick, healthy bite. The crunchiness and the slight natural sweetness help curb any cravings.

4. Pork Rinds

Who would’ve thought that something as delicious as pork rinds could be keto? They’re crunchy, satisfying, and zero carbs! I usually eat them plain, but they’re also great for dipping into keto-friendly sauces or even crumbling on top of salads for an extra crunch.

5. Pepperoni Slices

When I’m craving something savory, pepperoni slices are my go-to. I love pairing them with cheese for a quick, delicious snack. They’re also perfect for when I’m in a hurry and need to grab something that’s both filling and keto-friendly.

6. Berries with Whipped Cream

While fruit is usually limited while on keto, berries are a great low-carb option in moderation. I love indulging in a few strawberries or raspberries with some unsweetened whipped cream. It’s the perfect dessert-like snack that doesn’t kick me out of ketosis. It’s light, refreshing, and satisfies my sweet tooth.

7. Dark Chocolate (90% or Higher)

Every now and then, I crave something chocolatey, and dark chocolate is the perfect solution. I stick with 90% or higher cocoa content to keep the sugar low. Just a few squares are enough to satisfy my chocolate cravings without going overboard on carbs.

Stuck in the House During the COVID-19 Outbreak

I have been in the house, and working from home since 3/14/20, and it is now 4/19/20. I have also been an at home teacher for my two daughters along with it. It has been very stressful, and mentally draining not be able to go out and do the normal things that we were able to do prior to the pandemic.

Since that time, I have been experienced anxiety attacks and even felt heart palpitations. Sometimes I wonder if I am really getting sick, or is my mind playing tricks on me. I went to the ER just to find that my iron was low, and everything else looked good.

I have been working from home, and working with my kids while they complete their required online tasks, and I have kind of not been eating as much as I should, let alone eating a keto diet. Sometimes I would end up eating once a day, not even thinking about it. Then I thought to myself, “Could this be a reason that I have been feeling weird lately?” And, yes. It is quite possible.

I decided that I was going to just meal prep as if I was going to work every day just to have food on hand, because I definitely don’t feel like cooking three meals a day, while playing manager and teacher. I started with a test run today, and it went well. I feel great!

Another thing, just to stay active, I started working out using the 21 Day Fix (by Beach Body). I started that yesterday, and it was a great workout. This would be a good replacement for the exercise that I am missing from commuting to and from work.

Through this journey I have learned, that you have to try to keep some sort of routine going in order to stay sane. I have also learned that you have to stay busy. An idle mind is not always a good thing. I am happy that the weather is starting to get better too, because tomorrow on my “lunch break”, I am going to take a walk and get some sunshine.

Does anyone else relate to feeling strange being “stuck” inside during the quarantine? Even though I want my family and I to stay safe, I will be glad when we can get a small piece of “normal” back.

Fell Off the Bandwagon

Back in September, I created a YouTube video that outlined all of the times that I attempted to live the keto lifestyle. I originally started in 2017 after doing some research and joining a few Keto groups on Facebook. By joining the groups, I was getting to see real life individuals and their results. After reviewing what could be eaten, versus what I could no longer eat, I thought that it would be doable.

The longest that I was able to continuously do keto was for four months. In those four months, I was able to eat the way I was supposed to. I even incorporated IF or Intermittent Fasting. I would eat between the hours of 12 and 8.

Now, back to September… I did end up starting again, but failed miserably. With having a heavy workload, which includes working after hours and from home, plus having a family, it was very hard to maintain this time. Then, the holidays came and went and I was still not giving it my all. Even though, I haven’t been doing keto, I have tried to have as little sugar as possible, and I try to steer clear of bread.

Here we are again, now in February. I have made a vow to myself to try again. Even though I fell off the bandwagon, I am going to get up, dust myself off, and get right back on. I have found that the easiest way for me to stick to this is to meal prep. It is a heck of a lot easier to eat the right way when you have your own food. I have created a schedule for myself to ensure that I have set aside enough time to prepare what I need the night before.

I am starting again for the umph-teenth time. I plan to stick it out this time. I have to prepare for a my upcoming cruise. Lol

I plan to post here on a weekly basis to start, just to keep track of my new journey. I will also upload a new video this week where I will be doing a weigh in, and measurements. Once I begin to see progress, I feel like this will get a little better.

Finally made a video..

Originally, I said that I would make a YouTube channel and log my weight loss journal just to hold myself accountable. For months on end, I have thinking about doing it… Today, I actually decided that “It’s now or never!”… And.. I posted my first “real” video on YouTube.

Can you lose weight doing keto?

Now, in this video I did not plan anything before making it (as a pro could probably tell). I didn’t even say my name or anything, which I know I will have to make up for this. I just wanted to “get it done.. “, like right at the moment.

Even though I did not plan anything that I wanted to say, I think I did get my message across.. That I have researched KETO in the past, and that I have even had success with it. I just fell off of the bandwagon a few times. With the knowledge that I have, I plan to pursue this journey again.. Starting today. I am giving myself a fresh start. I would love to meet/mingle/talk to others who might be in the same boat as I am.

I know that Keto works.. I just have to have the will-power to stick with it. I think I am finally ready now though. I am taking this serious. Even through the holidays, and upcoming birthdays. With all the recipes that are available, there is no way that I should be slipping. In the long run, this is something that I want to do for ME. With that being said, the only way that I will be able to accomplish my goal is to hold myself accountable, do all of the things that I know I need to do.
